On Saturday evening was it time for me to try Barbara’s@justasmidgen - as she call it “Roasted Puttanesca Chicken” aka “Arrosto Pollo di Puttanesca”. It landed in my inbox a couple weeks ago and another recipe that talked to me straight away. A recipe that I just had to do in a near future.
Must say it was the closest to Italy I been for years – my kitchen was smelled like an Italian Mama’s kitchen. Not that I ever been in one, but I can image it smells of garlic, olive oil and chicken.
Didn’t do any changes to the recipe as such – didn’t have lemon at home, so I used lime instead and added less of it. Neither did I use fresh pasta – used dried and I chose Bucatini – a thicker spaghetti and I didn’t have any extra sauce to my dinner, use all the jus from the chicken – there was plenty of it.
As for the chicken I use a frozen product that already comes with Italian herbs on, instead of fresh – leg and thigh separate, but in principle the same .. but I used it defrosted. It’s a fantastic product and they had it for extra prices last week. Only 20.00SEK/$3.05/€2.35/£1.90 for 4 portion pack at NETTO. I added both more Herbes de Provence and dried oregano as the recipe said.
It’s so easy to make and so full of flavours – was a bit wary over the cocktail capers, but it was very tasty and gave a bit a sting to the dish.
A dish I will do to my girlfriends when they visit next time – didn’t needed too much thinking or many pots. Didn’t have a small oven proof dish – so I used a tin foil dish/container, because the ingredients has to be tight packed.
Thank you, Barbara for taking me to Italy for dinner – I delighted myself!!! Something I always said as kid .. when somebody thought I was too quite and asked me what I was doing.
On Saturday I found also a spot where I can take photos after the darkness has fallen – just under my over light above my sink, because it starts to get dark around 8pm. Otherwise my photo will too yellow and with the flash they get too bright. So one problem less.
As music cloud for the post I have chosen ‘O Sole Mio” with Robertino Loreti – known as Roberto and he had a massive hit with this recording in 1961 – all over Europe. He as only 15 years old then. Still alive, but it there was plans to murder him during a performance weekend at Niagara Fallsview Casino Resort in Febr 2010. He will be 65 next months.

I feel the same way when it comes to our parents aging… life taking its toll on their bodies. Oh… life has taken toll on mine, too! I think I’m ‘aging a little bit!’

Yes, they are … will get a girlfriend on visiting in October – guess what we are going to eat … then I will do mint and chili marinade fresh pineapple as dessert – will do a post about the dessert.

This sounds and looks so appealing, and I really like the idea of the capers. Capers add such a nice flavor to chicken. I’ll be sure to try this recipe myself, as it looks like the exact sort of thing we like to eat.
Libby, I know you would love this dish – even if no bacon in it – I think it will be fanastic if added some diced bacon.

No, never … it’s an instinct that we have as a trained chef – you know what will work and not work – plus you know ingredients you like to work with and eat. And they don’t have to be time consuming neither. Have done tried dishes that hasn’t worked, but never dishes that have tasted bad.

Yes, it does ….and I don’t think anyone will publish something that they don’t like themselves and same with magazines and cookery books.
Same when I came up with a dish for our menus – I had to do them over and over again to make sure they would work with and for my chefs.
Food…. you know, GOOD food & GOOD people, is so nourishing.
So … true – and we need both for our body and soul.

Stunning dish. I try to come back with feedback when I used somebodies recipe. Have got the smashed potatoes to work completely yet – try it again tonight. Love them, even if they haven’t come out right yet.
